This is a quite flat bread but it is ideal for breakfast. The crust is so yummy and the inside is light and fluffy. It doesn’t suppose a lot of work because it raises for 10 hors in the fridge and then it’s ready to bake.

These muffins are not only delicious, but very low in fat and heart-healthy. The oats and flaxseed meal add fiber and whole grains for a filling and delicious breakfast or snack, while the applesauce takes the place of egg, butter, or cream that you might find in other muffin recipes. You can make this recipe vegan by omitting the egg and using soymilk as a substitute for milk (I use Lactaid milk to make it dairy-free). To make it sugar-free, substituting Splenda for the small amount of sugar is just as good! A pecan half on top of the muffin adds a visually-appetizing touch while adding a slight crunch to a moist and filling muffin!

Crazy Spring weather we are having… it's hot, cold, warm, cold again! Today there's a slight chill in the air and the wind is whistling through my windows. Perfect morning to turn my oven on for this simple breakfast of baked eggs with wilted baby spinach. High in vitamin A, C, Folate, Manganese and Potassium.
If you don't have Asagio cheese you can use Parmesan cheese or even feta cheese. I've also used frozen organic spinach in a pinch and it works out just fine. You can use any leafy green vegetable you desire, kale or chard would also make great options.
If you want to do this all on the stove, you can easily make 4 wells in the wilted spinach in a large pan and drop the eggs into each one, then cover and cook on low until the eggs are set.

A great muffin recipe without all the fat and sugar, makes for a healthy breakfast. I make a batch of these at the beginning of the week, wrap individually and freeze them, then I have breakfast all week.
