Healthy Christmas Recipes

This recipe is from the King Arthur Flour website, one of my all time favorites. I’ve changed it a bit to make it more authentically German. It is a traditional Christmas bread.

Prep time includes dough sitting and rising time, hands on time is about 10 minutes. When it comes to breadmaking, simplest can be best. this recipe has 4 ingredients (or 5 if you decide to use some whole wheat flour). I learned this in a breadmaking class, and have made it before for neighbors for Christmas. Many people are surprised that it is homemade… it’s not difficult, it’s just a matter of learning. Variations are listed in directions. If you would like to learn more about making great bread, I recommend Artisan Bread in 5 Minutes a Day, Amy’s Bread, and The Bread Apprentice.

Hope you enjoy this!

Lightly pan fried breaded filet of flounder served in a lemon, wine, butter sauce with capers and parsley. A wonderful way to enjoy flounder, tilapia or any white fish.

We often have this with chicken for those of you who don't like fish, but I discovered it's great with fish too, and perfect for Christmas Eve for those of you who eat fish.

Christmas is right around the corner and I know a lot of you will be busy baking sweet Holiday treats in the weeks to come. My mom is one of them; she bakes enough cookies for a small army and gives them all away as gifts. My older daughter loves to bake, a tradition she shared with grandma since she was very little.

Me, I always preferred cooking to baking. Baking is so precise where cooking is easier to improvise. Which is why I love these cookies… no baking required!

They are pretty addicting and quite filling too. Oh, did I mention they are gluten-free (if you use gluten free oats) and egg-less? I even had a few of these for breakfast! Milk, oatmeal, peanut butter… why not?

Last year was the first time I heard of no-bake cookies. Someone had sent me their recipe and asked me to lighten them up. This year, once again someone asked me to lighten these up, so after a few attempts to get them just right, we finally had success!

To lighten these up I used Better'n Peanut Butter which you can find at Target, health food stores, Amazon, or even Trader Joe's. Some supermarket's even carry them.  Yes, you could use light peanut butter instead, but the fat content is higher and honestly, I liked them better with the Better 'n Peanut Butter!

You can roll them in powdered sugar or cocoa just before serving, or leave them as is. Keep them refrigerated if you don't plan on eating them right away.

This is one that will have your tastebuds begging for more. Note: When cutting hot peppers, disposable gloves are recommended and avoid touching your face. I saw the cutest idea. Place one very small whole pepper or one whole cranberry in each sterilized half-pint jar pouring over the liquid jelly and processing as recommended.

I got this simple punch recipe from a caterer many years ago, and it has become my favorite Christmas punch over the years. Quick to make, this sparkling punch with just a hint of green looks lovely with frozen cranberries floating in the bowl! And here’s a plus…if the punch is spilled and dripped on floors and furniture…no stains! Found on “Mennonite Girls Can Cook”.

I had a moose roast sitting in my freezer for a couple of months, because I had no idea how to cook it, not being a wild game fan. A friend suggested this method of cooking it and it was delicious. I made it at Christmas along with the turkey, thinking my guests could have a taste and I wouldn’t have to feel guilty about it being in my freezer anymore, but it was the hit of the dinner!

My mom has been making this recipe my whole life…I’m almost 23. It is my favorite thing to eat on Thanksgiving and Christmas. Now that I’m older, I have been making it the past couple of years. It is absolutely delicious and the addition of peaches makes it one of a kind.

Traditional Irish soda bread is a very simple and quick bread recipe. There are only a few ingredients. Any recipe that includes orange zest, raisins, or any other fruit is not soda bread. Keep in mind that even as late as the middle twentieth century oranges and other fruits were Christmas gifts. I seriously doubt the poor Irish peasants couldn’t get oranges to eat let alone use the zest. If you find a recipe that has sugar, eggs and/or baking powder, it is a cake. If it has yeast, it is not Irish Soda Bread either. Salt was difficult enough to come by. And under no circumstances would an Irishman use his whisky in his bread. (Talk about a stereotype!) So, if you are looking for a REAL “traditional” Irish SODA bread, look for the use of SODA only. Ignore anything else. I got this recipe from my grandma. She cannot remember where she got it. She only knows she and her mom made this together when she was a child. She says spoiled milk, even up to the point of curdling, is better than anything else. If you wanted to get as close as possible to the Mother Isle, use a “soft wheat” or Pastry flour. Otherwise, like my cheap arse, an all purpose works just fine. The recipe is so simple I am sure there are hundreds of others like it. So, I am not taking credit for anyone else’s idea. It’s just a really easy, simple bread recipe. Use it, you’ll love it.

This recipe is as easy as anything you will find after making ice cubes. Mix all ingredients in a bowl mix, knead only ten to fifteen times, and bake. Don’t forget the three to four beers it takes while you wait for the bread to bake.

This bread is commonly made during the Christmas season but can be enjoyed anytime of the year. It smells delicious as it’s kneading and baking and it makes wonderful French toast. It is made using the dough cycle of your bread machine.

I always like to make sugared cranberries in preparation for the holidays. They are extremely simple, and impressive at any Thanksgiving, Christmas, or New Years table! Sugared cranberries are like nature-made Sour Patch Kids, sweet and tart. Plus they are so pretty; just think of all the wonderful ways to use them:

Place them in a candy dish to be gobbled up by the handful!

Use as a fancy garnish for holiday pies, cakes…even savory dishes.

Fill martini or champagne glasses with them to decorate your holiday table.

Place them in little tins or gift bags for small edible gifts!
