Light, fresh and crisp slaw made with shredded cabbage, carrots, lime juice, rice vinegar and a slightly under-ripe mango topped with sesame seeds. A perfect side to fish, pork and even burgers.
Feels like summer here in New York, I bet a lot of you are firing up your grill, and what's more popular than cole slaw with those burgers and grilled meats! When I make a slaw, I never make the creamy mayonnaise slaw like they sell in the deli with all the sugar in it, I actually despise the stuff! I prefer to keep it light and fresh.
Slightly under-ripe mango's are used in this recipe. In South America, a typical street food snack is under-ripe mango with lime juice and salt. The mango isn't quite sweet yet and the texture is firm which is perfect for cutting the mango into strips for this recipe. You can use red cabbage or white or a combo of both. Sometimes I buy it pre-shredded to save time, it's even great with broccoli slaw! This lasts a few days refrigerated.

A variety of mushrooms makes this a great side for steaks or even as a snack atop of French bread. Using a food processer to slice the mushrooms makes this come together very quickly. Do not salt before cooking as the salt pulls the moisture out of the mushrooms.

In honor of St Patrick's Day go green the natural way with this low-fat, low-calorie, low-carb, gluten-free, vegetarian, and antioxidant rich snack.
It cracks me up to see my two year old munching on kale chips and going back for seconds and thirds. Normally when she finds a leafy green vegetable on her plate she picks it out and says "yucky", but with these kale chips, there's something about the texture and flavor that keeps her coming back for more. What surprises me even more is to see my husband (not a kale fan) enjoying them! Give them a try if you haven't had them, you may be pleasantly surprised!

A few tips: I prefer shredded cheese vs grated cheese, add it towards the end so it doesn't fall to the bottom. I used my misto to lightly spray them with oil which helps evenly coat them and get them crispy. If you don't have a misto, use olive oil spray. I calculated them based on one teaspoon of oil, and that's being generous. Don't over-crowd the baking sheet, use two or three sheets so they crisp up.

I was paying the big bucks for this snack from BistroMD, and they are delicious and popular, but I knew they couldn’t be that hard to make. They are great for a low fat, crunchy potato chip substitute. I am sure that you can substitute any Chex flavor for the oat cereal.

The small amount of butter and brown sugar plus a dollop of low-fat Greek yogurt and sprinkling of nuts or granola make it a classy breakfast, the start of a nice brunch, or even evening snack.

There are many chocolate lovers in my house, and these muffins disappeared quickly. I added a glaze on top for presentation, I like how it contrasts over the dark chocolate, but for the flavor you don’t even need it; either way the points remain the same. This recipe makes 12 large muffins, you could probably even get 14 if you fill the muffin tins 3/4 full. Mini muffins would make a great back to school snack for the little ones, they won’t even know there’s fruit in them! Leftovers can be refrigerated or frozen to last longer.

I love freezing my smoothies in popsicle molds to make healthy summer snacks. I normally do just one flavor at a time but I thought it would be fun to make them into stripes. My original intention was to make these red, white and blue hoping the color of the fruit would achieve this naturally but the colors turned out more of a purple, white and pink. Still pretty and a great way to make colorful popsicles without adding food coloring.
Although the berries have a natural sweetness to them, I suggest you adjust the sugar or agave to your taste before freezing them. I bought my freezer pop maker from Progressive last year on Amazon, I am linking to it here for all of you who asked where I bought it.
